Healthy, Immune Boosting Homemade Marshmallow Recipe

Would you believe me if I told you these homemade marshmallows are healthy and full of immune-boosting goodness? New Year, new you doesn't mean you can't have some delicious treats! These are made with all-natural ingredients, no refined sugar, and adding them to Raw Cacao makes the perfect hot chocolate treat on a cold winter day!

Ingredients

3 tbsp organic gelatin

1 cup warm water

1/2 cup honey or maple syrup

2 tsp vanilla
Directions
Pour the water into a saucepan and evenly sprinkle the gelatin over the top of it. Leave for 5 minutes to let the gelatin "bloom". You can see in the video that it gets jelly.
Meanwhile add honey/syrup and vanilla to a large bowl and whisk to combine.
Turn the heat on medium and heat just enough until the gelatin is completely dissolved into the water (you will not be bringing to a boil here). Remove from heat.
Add gelatin to syrup mixture. Turn the whisk attachment to your mixer on medium (Alternatively you can do which by hand with a hand mixer and whisk attachment). Whisk for 10 minutes or until it forms thick peaks on the end of your whisk (Do not over mix but be sure it gets to this point).
Then work fast. Pour the mixture into a parchment lined 8x10 dish and spread it out evenly. It will set up quickly so you don't want to waste any time or else you wont be able to spread it evenly in the dish without it getting clumpy ( You will see in this video mine got a bit clumpy).
Put in the freezer for 30-45 minutes. Remove and dump onto a cutting board and cut into squares (or use cookie cutters to cut out shapes). Store in the fridge.

*These are best served in a hot beverage and an excellent source of protein collagen. They are not quite firm enough to roast (you can, just be sure its briefly), however you can boil the syrup to get them firmer. This is just a nice quick way to have marshmallows on hand through out the winter months.
