4-Ingredient Homemade Caramels

These four-ingredient caramels are a MUST TRY this holiday season. They are a staple here on the farm. They’re delicious, and perfect for sharing (or enjoying just to yourself!). Keep them simple or spice them up by adding chocolate or crushed candy canes to the recipe.

Ingredients

  • 1/2 cup heavy cream
  • 1/2 cup butter
  • 1 cup cane sugar
  • 1/4 cup water
  • salt to taste plus flaky salt to garnish

Directions

  1. Line a loaf pan with parchment paper and set aside (See video for tips).
  2. Combine butter and milk in a saucepan and heat just enough to combine the two together. Set aside. 
  3. Add sugar and water to a separate saucepan and turn on med-high heat. Stir continuously while the sugar completely dissolves. You will want to scrape the sugar off the edges too so they do not crystalize. 
  4. Bring the mixture to a rolling boil. Once it starts to boil it is hands off, do not stir at all. The mixture will boil until it reaches a dark amber colour and the temp of the liquid will read 350F on a quick read therm (This is important and can take a bit to get to this point). 
  5. Remove from heat and stir in the milk/butter mixture. It will froth and start to stick a bit, be sure to constantly stir it at this point to avoid sticking. 
  6. return to burner and at a medium heat, bring the liquid to 250F. It will boil and become darker in colour, as well as quick thick at this point. 
  7. Pour it into the parchment lined loaf pan and place it in the fridge to cool (you can also do this overnight on the counter but it is faster in the fridge). 
  8. Once it sets, cut length ways into four equal strips and then cut each trip into 5-6 pieces depending how large you like your caramels. 
  9. Wrap each one in parchment paper and place in a dish for snacking or to gift to anyone during the holiday season!
