100% Homemade Sourdough Dinner Rolls

Looking for the perfect sourdough dinner rolls for the holidays? This step-by-step tutorial will show you how you can make the fluffiest, most delicious rolls.

This recipe, originally from my friend Lisa at Farmhouse on Boone, has become my go-to for both Thanksgiving and Christmas dinners. These instructions are from Lisa's website, however I have added my own notes to each one that I found helped when I made them :)

***These rolls are best served fresh as they can become quite dense over time.

Ingredients

  • -1/2 cup sourdough starter
  • -1/4 cup sugar
  • -3/4 cup warm water
  • -1/4 cup melted butter
  • -1/2 teaspoon sea salt
  • -2 1/2 cups all-purpose flour
  • -Egg, for egg wash

Directions

  1. In a stand mixer bowl, add ingredients.
  2. Mix on a medium speed, for my mixer that is 3 but I believe on a KitchenAid it would be around 2
  3. Place in a bowl and cover with a cover, beeswax wrap, or plastic (It is important not to let the dough dry out).
  4. Allow to rise overnight (8-12 hours). This also depends on your house temp, for me I can let this rise up to 15 hours in the winter. You can also put it in the oven with the light on.
  5. Divide the dough into eight equal parts.
  6. Form the dough into balls. I pinch the dough into the middle and then flip it over and use the tackiness from the counter to create tension in the balls.
  7. Place the shaped rolls into a greased 9×13 rectangle dish or a 12" cast iron skillet. Cover with a damp towel. Allow it to rise until doubled, approximately one to two hours (I like to do this in the oven with the light on). -Preheat oven to 375f.
  8. Brush top with egg wash (optional, but will give it that lovely golden color).
  9. Place the rolls into the oven for about 25-30 minutes, or until they start turning golden brown and the internal temp is 200f.

Hey! I'm Ash.

I'm a suburban girl turned farmer with a love for baking. My driving passion is to bring knowledge of baking for our families to everyone around the world.

Baking bread is such a primitive act of sustainability for our families and something we can all do ourselves!  For a decade I have been baking sourdough bread and for the last several years I have been teaching it to anyone who will listen. The science of fermenting grain for bread is an art and the way I teach makes it accessible and easy for everyone to learn sourdough!
