Ingredients
-
2 cups heavy cream
-
4-5 cups whole milk
-
6 egg yolks
-
1/2-3/4 cup sugar *
-
Cinnamon and nutmeg
-
1 tsp vanilla
Directions
Mix the cream and milk together and then pour about 4 cups into a saucepan. Add vanilla and spices and heat over medium heat until just before simmering (about 170f).
Meanwhile whisk together sugar and yolks until smooth.
Slowly add hot milk mixture to yolks, whisking continually so it does not form any clumps. This will acclimate the yolk to the hot liquid.
Pour back into a saucepan on medium heat. Heat until it reaches a simmer (about 185f) and remove before the eggs scramble but have gotten a bit thicker.
Mix in the remaining milk and pour into a container to put directly into the fridge to full chill. You can add more or less milk/cream at this stage depending on how sweet you like it.
