Sourdough Biscuit Cobbler

This Sourdough Biscuit Cobbler is a quick dessert that you can toss together in 10 minutes and bake while dinner is on the table. Make it with your favourite fruit. You can use what is in season or what you have persevered for winter. Rhubarb is one of my favour, straight from the garden or from the freezer. It is warm and cozy semi-sweet after dinner dessert.

Ingredients

  • 4-5 cups rhubarb , chopped (or apple, berries, peaches etc)
  • 1/4-1/3 cup sugar (I used 1/4 cup maple sugar)
  • 1 tsp cinnamon
  • 1/4 tsp salt
  • 1/4 cup cream
  • 2 tbsp flour
  • 1 3/4 cups flour
  • 1 tbsp baking powder
  • 1/ 4 tsp baking soda
  • 1/2 cup butter
  • 1 tsp salt
  • 1 tbsp sugar
  • 1 cup sourdough discard

Directions

  1. Combine all filling ingredients and layer a cast iron pan.
  2. In a bowl add all biscuit dry ingredients. Cut butter in and add discard. Combine into a cohesive dough.
  3. Flatten or roll, fold over and repeat. Cut into biscuits and top the rhubarb or fruit of choice.
  4. Bake at 350 for 35-40 mins!
