Sourdough Cinnamon Star (Cinnamon roll Dough)

This is my favourite thing to make at Christmas! But you can make this in to so many different things (a few are demonstrated in the video here).
This Keeps really well in a sealed container and is delicious even the next day!
Ingredients
- Cinnamon dough:
- 2 1/4 kamut or 2 1/2 ap flour
- 2 tbsp sugar
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp salt
- 1/2 cup butter
- 1 cup milk
- 1/2 cup sourdough discard
- Filling:
- 1/2 cup butter
- 1/2 cup sugar
- 1/2 cup brown sugar
- 2 tsp cinnamon
Directions
- - stir together flour, sugar, baking powder, baking soda and salt. Grate butter on top and mix together to form a crumbly mix.
- - add milk and discard, mix to for a cohesive dough. Knead for a few minutes until soft. Place in bowl and let rise for around 4 hours on the counter and then an additional over night ferment in the fridge (optional!).
- -melt filling ingredients together in a pot.
- - cut dough into four sections. Roll out each section, adding filling to the first three layers. Place the final layer on top.
- - cut into 16 sections as seen in video. Twist away from one another to form the star limbs.
- beat an egg and brush on top. Or use cream. Sprinkle with coarse sugar.
- -bake at 350 for 30-35 minutes. Dust with powder sugar.
