Sourdough Oatmeal Cookies
These are quite possibly the best oatmeal cookies I have ever had! Even better than that ones in my cookbook!
Ingredients
- ¾ cup flour
- ¾ cup rolled oats
- ¼ tsp baking soda
- ¼ tsp salt
- ½ cup butter, softened
- ⅓ cup coconut sugar (or brown sugar)
- ¼ cup maple sugar (or regular sugar)
- 2 Tbsp maple syrup
- ¼ cup flat sourdough discard
- 1 egg
- 1 tsp vanilla
- ½ cup chocolate chips (more if preferred)
Directions
- Cream together butter, sugars and maple syrup. Add discard, egg and vanilla and beat until creamed together.
- add in all dry ingredients and using a wooden spoon or dough whick incorporate everything together to form a cohesive dough (do not over mix).
- Fold in chocolate chips.
- Bake at 350 for 10 minutes or until edges are browned - do not overbake!
