Sourdough Oatmeal Cookies

These are quite possibly the best oatmeal cookies I have ever had! Even better than that ones in my cookbook!

Ingredients

  • ¾ cup flour
  • ¾ cup rolled oats
  • ¼ tsp baking soda
  • ¼ tsp salt
  • ½ cup butter, softened
  • ⅓ cup coconut sugar (or brown sugar)
  • ¼ cup maple sugar (or regular sugar)
  • 2 Tbsp maple syrup
  • ¼ cup flat sourdough discard
  • 1 egg
  • 1 tsp vanilla
  • ½ cup chocolate chips (more if preferred)

Directions

  1. Cream together butter, sugars and maple syrup. Add discard, egg and vanilla and beat until creamed together.
  2. add in all dry ingredients and using a wooden spoon or dough whick incorporate everything together to form a cohesive dough (do not over mix).
  3. Fold in chocolate chips.
  4. Bake at 350 for 10 minutes or until edges are browned - do not overbake!
