The Easiest Soup You Will Ever Make

Ingredients

  • 5 cups chopped butternut or acorn squash*
  • 10oz feta cheese (You can use more, i prefer not to)
  • 1/2 large bulb of garlic
  • 1/3 cup butter
  • 4 cups chicken or vegetable broth
  • 2 tbsp honey
  • salt and pepper to taste

Directions

  1. Add squash, feta, garlic, and butter to a large Dutch oven pot. Cover and bake at 400 degrees F for 45 minutes or until everything is softened.
  2. Squeeze the garlic into the pot and and add broth and honey (and any additional spices you might want). Blend using an immersion blender (Or transfer to a heat-safe blender) until everything is completely smooth.
  3. Either serve immediately or transfer to the stove and keep warm until you are ready to eat.
