Sweet Potato Waffle Taco
If taco night and brunch had a baby… this would be it. These crispy sweet potato waffles make the perfect base for a savory taco filling, topped with hot honey for the ultimate sweet-and-spicy combo. They’re easy, protein-packed, and a fun twist on traditional tacos.

Ingredients
- 2 medium sweet potatoes, cooked and mashed
- 3 eggs
- 1/2 cup grated parmesan cheese
- 1 lb lean ground beef
- Taco seasoning of choice
- Splash of water (as needed for seasoning)
- Hot honey, to taste
- Sour cream
- Salsa
- Any other favourite taco toppings
Directions
- In a large bowl, mix together the mashed sweet potatoes, eggs, and parmesan cheese until fully combined.
- Scoop the mixture into a greased waffle maker and cook until golden and slightly crisp on the outside.
- No waffle maker? No problem. Simply cook the mixture in a frying pan like a flatbread or pancake until browned on both sides.
- Brown the ground beef in a skillet over medium heat. Drain excess grease if needed, then stir in your favourite taco seasoning with a splash of water. Simmer until fully coated and flavorful.
- Top the sweet potato waffles with taco beef, drizzle with hot honey, and add sour cream, salsa, or any toppings you love.
