Sweet Potato Waffle Taco

If taco night and brunch had a baby… this would be it. These crispy sweet potato waffles make the perfect base for a savory taco filling, topped with hot honey for the ultimate sweet-and-spicy combo. They’re easy, protein-packed, and a fun twist on traditional tacos.

Ingredients

2 medium sweet potatoes, cooked and mashed
3 eggs
1/2 cup grated parmesan cheese

1 lb lean ground beef
Taco seasoning of choice
Splash of water (as needed for seasoning)

Hot honey, to taste
Sour cream
Salsa
Any other favourite taco toppings
Directions
In a large bowl, mix together the mashed sweet potatoes, eggs, and parmesan cheese until fully combined.
Scoop the mixture into a greased waffle maker and cook until golden and slightly crisp on the outside.
No waffle maker? No problem. Simply cook the mixture in a frying pan like a flatbread or pancake until browned on both sides.
Brown the ground beef in a skillet over medium heat. Drain excess grease if needed, then stir in your favourite taco seasoning with a splash of water. Simmer until fully coated and flavorful.
Top the sweet potato waffles with taco beef, drizzle with hot honey, and add sour cream, salsa, or any toppings you love.
