Delicious, Simple Summer Pasta Recipe

This simple, but delicious pasta recipe is a staple in our home. I love using fresh herbs from the garden. This is simple and quick to make which is perfect for this time of year. I hope you enjoy! :)

Ingredients

  • 1 pack fettuccine or spaghetti noodles 
  • 3 rona tomatoes (or a handful of baby tomatoes works too!)
  • 2-3 cloves minced garlic
  • some bunches of fresh herbs (I used oregano, parsley, and basil here)
  • olive oil
  • 1/2 cup heavy cream
  • salt and pepper to taste

Directions

  1. - dice tomatoes. Add olive oil, tomatoes, and garlic to a large saucepan. Stirring regularly to soften the tomatoes. Add some of the herbs.
  2. - Top with dry pasta and pour enough water to just cover the pasta. Cover and bring to a simmer, cook until the pasta is soft. Add more herbs and continue cooking.
  3. - pour in heavy cream and simmer for an additional 5 minutes until everything is combined. season with salt and pepper.
  4. - Serve with fresh grated parmesan cheese and garlic toast (Just brush bread slices with melted butter and crushed garlic, topped with cheese and salt, bake until crispy).
